Beetroot Dip

This is a very easy and healthy recipe for beetroot dip - beetroot is very good for you! Beet greens are a very good source of calcium, iron, Vitamins A and C. although we don't use the greens in this recipe you should put them aside to use for another dish. Beetroots are an excellent source of folic acid. They are a very good source of fiber, manganese and potassium. Beet greens and beetroot are a good source of phosphorus, magnesium, iron and vitamin B6.

 

Preparation time: 10 mins

  • Cooked beetroot - half a pound or 250 grams
  • ¼ cup low-fat plain yogurt (60ml)
  • 1 teaspoon ground coriander
  • 2 teaspoons ground cumin


Use a blender or food processor and combine all ingredients until very smooth. Save the beet greens to use

Serves: 4

Per serving: 0.6g fat; 137kj


Dip can be made in advance and stored in the fridge.
