Sift the flour into large mixing bowl; gradually stir in the combined buttermilk and skim milk to make a smooth batter.
Beat the egg white in a seperate bowl until it thickens and fold lightly into batter.
Pour ½ cup batter mixture into heated large non-stick frying pan. When bubbles begin to appear, turn the pancake.
Cook until lightly browned underneath and then remove from pan. Make sure you keep them warm until you have cooked enough to serve ;-)
