Roasted Garlic Mushrooms With Crispy Ham

This is a tasty little snack, good for brunch, lunch or afternoon tea. Try to use free range ham if you can, and choose your favorite mushrooms, we use a combination but flat mushrooms are really good, also known as portobello mushrooms, because they tend to be tastier.

 

Preparation time: 10 mins
Cooking time: 25 mins

 

200g button mushrooms
150g flat mushrooms, halved
100g Swiss brown mushrooms
1 medium red onion (170g), sliced thinly
1 clove garlic, crushed
1 tablespoon lemon juice
coarsely ground black pepper
cooking-oil spray
200g shaved light leg ham
½ small French stick, sliced thickly
8 basil leaves, torn

Combine mushrooms, onion, garlic, lemon juice and pepper in baking dish; spray lightly with cooking-oil spray. Cook in hot oven, uncovered, about 20mins or until mushrooms are tender, stirring occasionally.

Spread the ham on another oven tray and when the mushrooms have been cooking for approx 5 mins add the ham tray - cook for about 15 mins or until crisp.

Toast bread on both sides; stir basil through mushroom mixture. Serve bread topped with slices of ham and mushrooms.
